Durian Ice Cream Cake 榴莲冰淇淋蛋糕卷







冰淇淋:

200 克 Coffeemate (Nestle)
250克 牛奶或椰奶
250 克 榴莲肉
100 克 细糖
5 克 吉利丁粉 (加少许水混合,微波至溶化)

所有材料混合放入搅拌机把榴梿肉搅成泥,放人冰箱冰冻(结冰)(约3-6小时)
取出,用叉子弄碎, 搅打至浓稠。
倒入铺纸模具,放入冰格凝结。

巧克力冰淇淋:牛奶改成巧克力牛奶500克,打蛋机搅打至浓时另加入巧克力碎100克和香精
蓝莓/草莓冰淇淋:牛奶改成草莓牛奶,另加入草莓酱150克和香精
芋头冰淇淋: 榴莲肉改成芋头泥,另加入适量芋头香精, 牛奶改成椰奶
cookies and cream 冰淇淋 (Oreo) : 加入1/2 - 1 根剖开香草夹一起煮滚, 放凉后, 取出香草皮, 冷冻冰箱. 取出打至浓时, 加入适量Oreo饼碎.混合


冰淇淋模具


戚风蛋糕材料 : (11“x14", 铺纸)

蛋黄 4  (A)
牛奶 80 克
油 40 克
低粉100 克

蛋白 4 (A)
细纱糖 70 克
柠檬汁 1/2 t

做法 : (预热烤箱 180 c)

一般戚风蛋糕的做法. 取1汤匙面糊, 加入少许色素,拌均. 在纸上画图案 , 烤一分钟. 取出, 倒入其余面糊, 轻震一下, 续烤20-25分钟至轻按蛋糕表面能弹起. 取出,撕开四周纸散热.

* 加入吉利丁粉的用意是让冰淇淋比较慢溶化.

Ingredients For Ice Cream :

200 g Coffeemate (Nestle)
250 g milk or coconut milk
250 g durian flesh
100 g caster sugar 
5 g gelatine powder(mix with little water, microwave to melt)

Combine all the ingredients and process with food processor ,freeze for 3-6 hours
Break up the ice cream mixture using fork. Beat with electric mixer until thick.
Pour into suitable pan (line with parchment paper) and freeze until firm.

Chocolate Ice Ctream :change milk  to chocolate milk 500g,add 100 g chocolate chips and chocolate emulco into the mixture, mix well before pouring into pan.
Blueberry/Strawberry Ice Cream : change milk to strawberry milk, add 150 g strawberry Jam/ strawberry pie filling.
Yam Ice Cream: change durian flesh to mashed yam ,milk to coconut milk, add some yam essense

Ingredients For Chiffon Cake :  (11"x14" pan, line with parchment paper)

egg yolk 4 (A)
corn oil 40 g
milk 80 g
cake flour 100 g
vanila extract 1 t

egg white 4 (A)
caster sugar 70 g
lemon juice/vinegar 1/2 t

Preheat oven 180c.
Beat egg yolk with corn oil and milk until smooth. Sift in the flour. Set aside
Beat egg white with lemon juice until foamy, add sugar in 3 batches , beat until stiff peak.
Spoon out 1/3 of the beaten egg whites and fold into the egg mixture. Lightly fold in the rest of the beaten egg whites with a spatula, until just combined.

Bake for about 20-25 minutes
Remove from oven , tear off the paper around the cake, leave to cool.
