Castella - 蜂蜜蛋糕








食谱取自这里 (有更改)

材料:(19cm模具,围几片裹锡箔纸的纸皮,铺蛋糕纸)

全蛋 4 
蛋黄 3
细砂糖 120g
高筋粉 40g 
低粉 90 g (可用高粉)
蜂蜜 25g
liquid glucose 25 g
味淋  12 g (或`rum 酒)
牛奶 20 g
玉米油 12 g
盐 少许

做法:(预热烤箱170c)

将liquig glucose, 牛奶,蜂蜜和味淋小火加热,搅拌至融化。
蛋和糖隔热水高速搅打至浓稠,滴落有折痕。

(马来西亚天气太热,蛋糖一般室温就能打发,无需隔热水)

蛋糊加入盐和蜂蜜味淋的混合物,拌均;
分次筛入粉类,用手动打蛋器轻轻搅动混合,橡皮刮刀翻拌至顺滑。
浇入油,拌至细腻面糊。

从较高处慢慢倒入模具,模具底部多垫一个烤盘,入炉烘烤40-45分钟。

烤好的蛋糕倒扣在涂油蛋糕纸上, 脱模撕开蛋糕纸。将蛋糕翻正。凉后切片。

* 没有立即食用,可用保鲜纸裹好密封以免水分流失。
